Upper portion from middle of the pork half. Limited to the front with straight cut across the loin and side between 6. and 7. lumbar vertebrae so that all of the hip joint follows the thigh. Limited in the front by straight cut between 5. and 6. thoracic vertebrae so that the 8 rib follows the loin and all cartilage in the shoulder blade follows the forequarter. Limited by cut below parallel to the loin 3 – 6 cm from the end of the loin muscle. Skin and surface fat are attached.
