Untrimmed hindquarter of pork half separated from the middle part of the carcass by straight cut through the loin and side between 6. and 7. lumbar vertebrae so that the whole hip joint follows the thigh. Comes with skin and with or without toes. Before the carcass is taken into part the tenderloins are removed from the thigh.
