Upper portion from the middle of pork half. Limited in the front with straight cut across the loin and side behind the 7. lumbar vertebrae so that the hip joint follows the loin. Limited by straight cut between the 3. and 4. thoracic vertebrae so that the 10 rib and part of the shoulder blade follows the loin. Limited below be cut parallel to the loin 3 – 6 cm from the end of the loin muscle. Skin and surface fat are attached.
