Shoulder without scapula
The shouder is removed from the forequarter so that the humerus, radius and scapula, along with associated muscles, are included retained and then trimmed of loose surface fat. The scapula is then released from the humerus so that the big scapula muscle remains with the shoulder muscle. The talus is sawn off.
