Loin narrow
Obtained from middle carcass (LM1.1.1). The loin is separated from the thigh between 6th and 7th lumbar vertebrae and from the forequarter at the 4th and 5th thoracic vertebrae. The flanks are removed by a longitudinal cut 8 cm from the midline of the loin. This contains part of the shoulder blade but not the hip bone.
