Hrossa – Outer thigh
Obtained from deboning. Is mostly with loin tender it is the biggest muscle from the outer portion of the middle thigh and hip. The muscle is separated from hip steak, chuck, inner thigh by cutting mostly after the membrane. Surface fat and rough membranes are trimmed away. Care must be taken to cut the least from the muscle.
