Horse – inner thigh
Obtained from deboning. Is the biggest muscle inside the middle thigh and is separated from the chuck and the outer thigh by cutting mostly after the membrane. Surface fat, tendons, intramuscular fat and smaller muscles trimmed away. By deboning care must be taken to take the least of the muscle.
