Kjötbókin

Obtained from deboning. Is the biggest muscle from the outer portion of the middle thigh and hip and is separated from loin tender, hip steak, chuck, inner thigh by cutting mostly after the membrane. Surface fat and rough membranes are trimmed away. Care must be taken to cut the least from the muscle.
