From the top part of the outer thigh. The muscle above the pelvis closest to the loin, the part of the muscle that covers the prime and follows it when the loin is cut from the thigh. Surface fat, intramuscular fat, blood vessels and tendons are trimmed away. Care shall be taken to take the least from the muscle.
