Carcasses of calves younger than three months:

MK, are those with white meat and well filled.

UK I, are those that are well filled, meat white and beautiful and not less 30 kg.

UK II, are those that are similar in appearance and UK I and weight 15-30 kg.

UK III, are those from newborn calves and weigh less than 15 kg or from calves up to three months of age, because of shrinking and appearance cannot get to UK I or UK II, although the weight allows.
