Strip loin w/3 ribs
Anterior hindquarter after the thigh and side have been removed. The side is taken by straight cut parallel to the loin approximately 22 cm from its midline by the size of the half. Kidney chitterlings and other fat inside the loin shall be removed. Strip loin is available with or without tenderloins at the request of the buyer. If they follow they are released from the thigh before the strip loin is cut away. Three ribs follow the loin.
