Obtained from thigh or middle thigh by deboning. Is the biggest muscle in the outer part of the thigh and down to the hip. Is separated from the sirloin steaks, round, inner thigh and thigh tongue by cutting mostly after the membranes. Surface fat follows the outer thigh.
