Roughly trimmed inner thigh
Obtained from thigh or middle thigh by deboning. Is the biggest muscle inside the middle thigh and is separated from beef round and outer thigh by cutting mostly after the membranes. Surface fat, intramuscular fat in between, surface muscles and smaller muscle are attached to the inner thigh.
